Treat yourself to pork

Top chef Phil Vickery demonstrates just how healthy and tasty pork can be,

Think of succulent roast pork with crackling and you probably wouldn’t view pork as an obvious candidate for healthy eating, delicious though it may be. But you’d be wrong. In fact, fully trimmed cuts have only 4g fat per 100g and more than a third of this is the beneficial, monounsaturated, cholesterol-lowering kind that’s prevalent in the healthy Mediterranean diet.

Pork is low in sodium, too, and also a rich source of protein plus the energy-boosting vitamins B1 (thiamin) and B12. Add to that zinc to help keep your immune system in good shape and selenium, an infection-fighting antioxidant, and you start to view it in a new light.

Phil Vickery gives pork as one of his favourite healthy choices and, teaming up with leading nutritionist Angela Dowden, he’s devised a selection of recipes that add flavour to pork without adding fat. As well as being wonderfully tasty, they are all quick and easy to prepare.
