The humble spud has survived the onslaught of fashionable low- or no-carbohydrate diets and is making a welcome comeback

This could be the thin end of the wedge for potatoes. They have regained ground and are fighting back! During recent years, controversial high-protein, low- or no-carbohydrate diets persuaded millions of us to abandon the versatile tuber but, as the British Potato Council points out, the potato industry is fighting back. And with good reason, too.

Potatoes themselves are not fattening... they are naturally rich in fibre, starch, vitamins and minerals. They are a healthy eating option and a naturally convenient food; their versatility makes them a popular choice to accompany meat or fish, and they can be used as the main ingredient to create a satisfying vegetarian meal.

The following eight recipes - from light supper or lunch dishes to hearty family fare - have been chosen with this in mind.
